About the Tea
Ailaoshan Black Tea is one of the most breathtaking teas I have had the chance to indulge in. This tea is grown at over 2000 meters above sea level and shrouded in warm mist nearly year-round. It is harvested from tea bushes that have been cultivated on the edge of one of the most diverse subtropical ecosystems in the world — The Ailao Mountains (Ailaoshan) Nature Preserve. This nature preserve is home to at least 550 plant species and 460 animal species, including the black gibbon and bengal tiger.

Harvested in mid-spring of each year, Ailaoshan Black Tea is carefully processed and carries a warm aroma of toasted cocoa and caramelized plum. At first taste, a range of fruit notes can be identified amongst the delicious cocoa and caramel undertones. The most noticible fruit note is that of caramelized plum, followed shortly by a mix of black currant and longan fruit. A savory quality is experienced at mid-sip as well as in the aftertaste, and salted caramel with a hint of roasted fruit lingers on past the last sip. This is a truly memorable cup of tea and will please any connoisseur of rare and extraordinary black teas!

How to brew the perfect cup:
Steep 1/2 tablespoon of leaves in 8 ounces of boiling water for 3 minutes.
2nd infusion: 5 minutes

I do love these Chinese black teas. I knew I would love this one as well although it took me three tries to be able to focus on tasting it properly (with the first one I got distracted with something, and with the other – the water was vile, not sure why, such a waste though).

Smells like piles of honey and caramel! The brew if of a beautiful mahogany color. Every sip is smooth, creamy and with no bitterness at all. I think there are some chocolate notes, although faint (yet they do not feel like a weak and funky chocolate notes that are often found in artificially flavored choco teas). Also some nuttiness that is more on the sweet side. It is just amazing how sweet this tea is. I think there’s a slight hint of fruitiness in the aftertaste like… a ripe pear?

I think there’s going to be different flavors in this tea every time I make it. Which is just great. This definitely belongs to my all time favorite black teas now. Whispering Pines are out of it at the moment, so I guess I am going to hoard the rest of what I have :D Hopefully they will re-stock it one day :)

Aroma of caramel, raisin and longan fruit. This tea is rich, fruity, some malt,very smooth and delightful. there is longan fruit aftertaste lingering in my mouth. No sugar for me but some people may add to elevate it to a dessert level tea. it tastes like Taiwanese black tea. it satisfies my craving for a black tea (Assam just seem too heavy during the Summer). i have to make it side by side with Ai Lao by Yunnan Sourcing.

I finally opened up my stash of this yesterday. It will not be here for very long that is for sure. This is such a wonderful and different black tea. I am not sure how to describe the flavors. It is sweet, hints of fruit, but their are also hints of bread.

Seasoned my first yixing! Yes! It was gifted to me over a year ago by some tea-drinking friends. It took me a year to get over how intimidated I was of using yixing teaware. I believe it was purchased at Teavana, and as I’ve never used a yixing pot before I can’t speak for the quality. It should do just fine. I rinsed it with boiling water several times, then left some of GTT’s Honey Black steeping overnight. Later in the day, I rinsed again with boiling water, then left it in a pot of hot water with some Laoshan Black and SOT’s Coonoor Nilgiri. Waited several hours, then removed it and rinsed with boiling water again. There’s no residual clay smell that I can tell. The maximum capacity is just under 8oz, if I fill it nearly to the brim. I decided to test brew some Ailaoshan Black in this little pot. Maybe I should stick to lighter teas, teas with strong notes of honey and baked bread? I haven’t decided. I might simply use it for my favorite black teas; they share many of the same qualities, though not all.

Anyway, there is an intense honey sweetness to this tea that wasn’t present before. Brewing in the yixing also upped the buttery, baked notes that the tea already had. There’s cocoa and malt but it’s a little subdued. The stone fruit, cherry flavors are also barely present. The finish has a touch of caramel; it’s creamy and full, then it recedes into a more crisp, floral aftertaste. I’m wondering if some of the chocolatey notes are hiding in the yixing somewhere, to reappear later in a different cup, with a different tea.

This was more a record of my first yixing experience than the tea itself. For a better description of the tea, see my other tasting note.

congrats on seasoning your new pot :)) I waited forever seasoning my first one too – then quickly added several to the collection. They aren’t as scary once you start using them regularly

Thanks! I think my friends may have unwittingly given me a new obsession. I’ve brewed many cups of several different teas, and every one has been a perfect cup. Lush and rich and absolutely delicious. Do you designate your yixing to certain flavor profiles, or more general types of tea? It’s too soon to tell what my preferences would be, but I’m curious.

I have one for dark oolongs – but really I mostly drink DHP.
I have one for sheng – I don’t drink a lot of it so that’s fine
I have one for shou – I drink most shou from the pot with no issue
I have one for Special Dark – this pot is larger and I LOVE Special Dark western steeped – I also don’t really want those heavy chocolate notes in my regular shou pot
I have one for blacks – I really only drink Yunnan and Fujian blacks – so I’m not too worried about that (if I was into Darjeeling – I would do that in a separate pot)
I have 3 more that I haven’t seasoned – I think I’m doing to do one for aged sheng…. but I haven’t really gotten into that yet… Probably do another one with just general shou.
I just like them – they are so cute and I like how the tea steeps in them…. :))

I agree. And I can definitely see myself getting overly attached to my teaware this way—like each one has its own distinct flavor and personality. They are cute!! I drink mostly Yunnan and Fujian blacks too, so I don’t see it being a big problem. I will probably get several more in the future and season them for different things. And wow, you seem to have a lot of teapots. :P

Can you say “best problem ever”?! I’m so jealous of your collection. Now that I’m past the “MUST TRY ALL OF THE TEAS” phase and comfortably settled into what I know I like, I’m beginning to enter an “I NEED MORE TEAWARE NOW” phase. Should I admit that I actually started taking a pottery class thinking it would be cheaper to learn to make my own than continuing to buy….. ((LOL it’s NOT – really really hard to make cups – fun but HARD) I’ve bought some amazing pieces locally. Go to the sale and let the addiction begin….
I did that too – stopped buying ALL THE TEA – needed to cupboard reduce so stopped buying tea and just moved right into teaware. Oh well it’s fun and it could be worse…. :)

Oh, yeah. Making pottery is not easy. I’m a fine arts student at a university; I’m considering taking a course in Advanced Ceramics next semester so that I can fuel the addiction. All I would make is teaware. And everything I make would probably be off-center, because making pottery is HARD. It’s fun and meditative but wow. There are a couple of people here who are fantastic potters. I’ve considered commissioning a tea set from one of them, but it’s hard to justify the expense. (Though I will probably end up spending loads of money on teaware in the long run, anyway…)

This morning, I’m having a kid’s breakfast. I’m hungry cause instead of eating dinner last night, I got drunk…Tea drunk that is. With giggles and all the fun that comes with it.

So I’m making “oeuf dans le trou”. (Egg in a hole???) Don’t know if other people have that dish in the world, but I’m guessing yes cause I found this pic:

That’s exactly how I do mine, with a thick whole grain slice of bread and a big omega-3 egg.

When we were kids, It was a fiesta when my mom cooked them…

I dip the little bred circle from the hole in my egg yolk. So much yum, so much fun!

And what best tea to pair with it than by beloved Ailaoshan Black?

The sweet salted caramel notes chase away the eggy aftertaste in my mount, it’s almost like having eggs with maple syrup.

Then on it’s own it’s like having a little dessert. Malt with dark chocolate, sweet dried fruits…
I’ve written it all in previous notes.

This tea hugs me in the morning, and I can only hug back :-)

Yes eggs in a hole! I had so much fun with the tea and giggles last night and there was some dinner skipping here as well. I was HUNGRY and I had avocado toast with a few pecan halves and some pu-er concoction and steeping a cup of this awesome tea right now.

My mom always made egg in a hole for us as kids, to this day no one makes them quite the same! I try to avoid wheat these days but once in awhile I just can’t resist an ‘egg in the hole’ as a treat. My favorite part was always eating the little square of bread fried up in butter beside the egg in a hole!

We always called it egg in a basket. I loved it, my kids loved it. I miss it, & yes, there are many gluten free variations that are fun, but of course, never the same…sigh…it’s that little circle of toast!

OK – the banana deal: I used my cast iron skillet and wee bit of butter and sliced my banana length-wise and did a little stove-top grill of the banana until caramelized and brown in spots. Warmed the chocky-almond butter for 15 seconds and then drizzled over the banana. Yes – you want it.

I want fried bananas, drizzled lightly with maple & maybe some coconut milk on top,& toasted coconut flakes.Yeah…I want that.
For dinner I’m having brats (nitrate & other BS free), a cultured dill from last summer, homegrown asparagus & cukes, & sweet potato french fries fries.
Tomorrow I’m planning to make a batch of cauliflower tabouli. I haven’t had tabouli for a long time & cauliflower makes a pretty good sub for bulgur too. I have all the other ingredients in my garden: parsley, mint, cukes, sungold cherry tomatoes, onions, garlic.
Foodie? Damn right!

Another wonderful tea from Whispering Pines! This tea isn’t quite as potent as some of their other black teas, smoother perhaps, but no less flavorful. Caramel is the primary note for me, with a fruity aftertaste that I can’t quite pin down. Very very tasty!

Me and this tea, we’re going to have a complicated relationship. The firs time I had it, I thought, oh no, it smells like one of those black teas, those ones that smell heavy and manly and not for me. But then, it tasted OK. not fantastic, but I finished the cup while watching an episode of Boy Meets World last night (did I tell you how much I LOVE that show? Im watching the whole series getting ready for the new Girl meets World.).

I wanted to try it again before writing a note so here I am again with the tea. This time I really like it. Remember what I said in my last note about being fickle about my black teas and not knowing if I like them for a while? I am listening to the Beatles and maybe ’cause this music always puts me in a good mood, the tea just tastes better? strange how environment can have such an effect like that.

The tea smells fruity, woody, complex, these are all good traits normally, but often not good for me. The flavor, this particular time around, invokes warm and cozy feelings. Its like teatime Gemütlichkeit (if I might reference some Biedermeier literature :p)

By the way, Im done with undergrad school forever now. finally! finished my very last undergrad paper last night. I am three credits short of 3 separate degrees and Im finally going to graduate school. finally! woohoo!
