From Den's Tea

Den’s Matcha Miyabi is a high quality Matcha and is often used for the official tea ceremony. Our Matcha Miyabi brews a thick matcha called Koicha. It is very thick and creamy with a full flavor of sweetness, and is distinguished by its bright green color.

Tasting Profile:
It has no astringency or bitterness. It is a creamy liquid with a rich and thick sweetness that remains in your mouth well after the last sip.

Den’s Preferred Brewing:
Water: 3oz @ 180F
Matcha: 1 gram or 1 scoop of Chashaku or 1 1/2 rounded teaspoon

This is my first tasting of this Matcha from Den’s although I received the order well over a week ago. So many teas to taste…

The color of the prepared Matcha is a beautiful shade of bright green. Makes me wish I could paint with it!

Ahhh… Matcha! Thick and sweet and absolutely delightful. The flavor is smooth with no astringency, but I do taste a slight bitterness to it… but a good bitterness! It tastes very rich.

As yummy as this Matcha is, I do think I prefer DoMatcha. Perhaps I’m a bit spoiled? But, this is certainly good and worthy of my beautiful chawan. (Wanna see? http://www.flickr.com/photos/eccentricpastiche/4503534853/ )

LOL! I also ordered some of the ginger matcha from Art of Tea, and I haven’t opened that package yet. I think I got it two weeks ago? I love Matcha… but, I being one who doesn’t like gismos or gadgets when it comes to tea preparation only make myself Matcha maybe once a week. Sometimes more… sometimes less.

Ginger matcha is next on my flavored list to get after the strawberry is gone… unless that’s pushed back by another WONDERFUL 52teas blend. I love ginger. I have matcha daily- almost always in my chawan but occasionally in a yogurt- sometimes both ways on those days.

I haven’t tried it in yogurt… but something I definitely will have to try… next time I’m at whole foods I’ll make a point to pick up some yogurt. Sounds yummy!!!

Yogurt + Matcha = Yummy Idea. I have some vanilla Cream-Top Brown Cow yogurt in the fridge—I’m going to try it with matcha right now!

Mmmm! Matcha! I’ve been sent home early with a hearty Happy Holidays and orders to take some time to go shopping. I have no holiday shopping to do and so I decided to make myself a wonderful cup of matcha and sit cozily at home and write. I prepared it thick this afternoon and its lovely grassy sweetness is making a good day even better. No bitterness. No astringency. Just sweet, lovely matcha. Mmmmm!

CAROLYN! You just had to rub in that you had matcha didn’t you. You’re lucky mine should be here tomorrow. LOL J/K ;) I wonder why companies suggested different amounts of water. Rishi suggests 4-5oz. Isn’t there a standard?

I don’t think there is. It is up to personal preference as to how thick it should be. Also, different kinds of matcha can tolerate different amounts of water. So it is a trial and error sort of process. (A yummy trial and error sort of process.) I use a half teaspoon and then fill the matcha cup half-way up with water before wisking.

Since there’s a matcha tea ceremony I would think there would be standards, there seems to be standards for everything else related to tea:) What’s the difference between this and their matcha kaze?

I just noticed you have a steeping time listed… how does that work when the tea gets whisked in?

I couldn’t really figure out how to do that, so I just estimated my wisking time and listed that as steeping time.

As to tea ceremony standards, I don’t know. I’ve been to exactly two tea ceremonies in my life and those were years ago. My memory of them boils down to “Hurts to kneel” and “Good sweets. Bitter tea.” and “I need a kimono!” Not very sophisticated, I’m afraid.

I do not know the difference between the two matchas. I bought this one because it guaranteed to be free of bitterness and astringency and I wanted my first experience making matcha to be successful. My tea ceremony experiences both featured bitter matcha and little Japanese sweets to make it better. So I wanted to be careful. I’ll probably get the other once I’ve finished the miyabi matcha.

you obviously like this matcha, but how do you feel about Den’s in general? I’ve been thinking about purchasing some tea from Den’s, but I wanted to see what everyone thinks of that site.

@teafreak: I’ve been impressed by them. I loved the matcha supplies I bought from them. I loved the Apple Sencha tea (as did my partner). I loved the genmaicha. I still have more to try, but so far I’m impressed by them. Also, I feel comfortable with them for reasons I cannot explain. It’s kind of a gut feeling of comfort. I grew up in Denver, which has a sizeable Japanese community and it may just be that it reminds me of my early experiences with Japanese shops, but whatever it is, my gut is saying nice things.

@teafreak- I second the apple sencha. That’s the only one I’ve tried so far. I got their $3 sampler so I’ll have lots more to report about soon.

@Cofftea: One was at a special event in Sakura Square in Denver and the other was at the Teahouse in the Japanese Gardens in Denver’s Botanic Gardens. (It was fun and I eventually got my much longed for Japanese kimono. Only later did it occur to me that I had nowhere to wear it.)

If you go to Denver and are interested in Japanese culture, the very, very place to go is Domo, which is a restaurant that serves Japanese country food. It is the only restuarant serving this in the United States. Both the restaurant (which has its own museum) and the food are an enlightening and delightful experience.

After that, visit the shops and restaurants in Sakura Square.

@teafreak, I just tried their genmaicha (1st experience w/ it) and it was good. I didn’t care for it (NOT because it was bad, just personal taste), but it was very good in that it tasted EXACTLY how it sounds lol.

I’ve been wanting to try this for a long while and recently got a sample from Den’s!!! I’m told this will change my opinion of matcha’s! :)

One thing I have found is…I have been using TOO MUCH while preparing! Well, that could do it, eh!?

It smells like buttery vegetables…in a good way. Yes, it’s creamy. That’s a plus. It’s NOT Chalky…a definite PLUS.

Um, yes. This is CERTAINLY better. MUCH. I now like Matcha. Thanks Den’s Tea. I’m a changed girl!

Too bad you had a bad experience IdentiTEA. I’m 1 for two on the ones I’ve tried… and the other one I can definitely see potential in- I just happen to not care for fruity white teas. I might also mention that I have never had to deal w/ allegedly pushy sales people- I got mine from a friend. But that’s ok since this is an online deal anyway:)

The green is vibrant, though difficult to discern visually between it and Den’s Matcha Usucha(Matcha Kaze) – which reflects positively on Den’s usucha. Make sure to use a sifter to eliminate clumps. I vary my scoops day-to-day. Den recommends only 1 chashaku scoop, which I do when I’m in a particular rush. Otherwise its 2-3 chashaku scoops for me. 1/3 or 1/4 cup of Water at 175F. Foams up nicely; it could be my imagination, but I could swear his usucha foams up better. Flavour-wise, it is quite good. Den advertises the elimination of bitterness, compared to his usucha. I tend to agree, the small amount that was detectable in his usucha, was faint or non-existent in this koicha. The natural sweetness however isn’t as prominent as I would have liked. Compared to his usucha, I do prefer this. The question is if it worth twice the price of Den’s usucha? Ultimately, that is a personal preference. Compared to other Matcha Koicha’s, it is priced competitively. So definitely worth a shot.

Sipdown no. 1 of October 2019 (no. 100 of 2019 total, no. 588 grand total).

My most recent take it to work tea, using the shake in the thermos method.

It continued to be a mild, creamy matcha with prominent marine notes to the end.
