Tasting #1 – Steep Time 2 Minutes
Excellent color already, slight metallic flavor with roasted qualities. I’m absolutely amazed at how this tea has turned out already.

Tasting #2 – Steep Time 4 Minutes
This reminds me of the Iron Goddess of Mercy with the darkness of the flavors, but not being black. Delicious and soothing

Tasting #3 – Steep Time 6 Minutes
The aroma and flavors have stayed consistent all the way through. I am loving this tea. As soon as my cup is empty I’m ready to fill it again.

I’m very satisfied with the spices in this chai, but I think the problem here is that I just don’t like red teas. I wasn’t happy with the mouth feel and it just tasted like spicy water.

Tasting #1 – Steep Time 2 Minutes
No distinguishable aroma with a very light color. No flavor can be detected at this time.

Tasting #2 – Steep Time 4 Minutes
Very light roasted aroma, slightly darker in color but no difference in flavor.

Tasting #3 – Steep Time 6 Minutes
There is a hint of saltiness to this now that makes the roasted flavor a bit more robust. I opened the teapot to smell the leaves and they smell exactly like seaweed, but the salty flavor isn’t overwhelming to my tongue. More like a finishing salt, helping to complete a meal.

But it isn’t enough to make me love this tea. I want more from my tea, but this one doesn’t even meet my bare necessities.

Tasting #1 – Steep Time 2 Minutes
Light in color and light in flavor. Hardly anything to get excited about.

Tasting #2 – Steep Time 4 Minutes
The flavors and and colors are slightly more noticeable. Light roasted qualities are lingering on my tongue.

Tasting #3 – Steep Time 6 Minutes
Roasted flavors are becoming more prominent, but it just doesn’t taste finished. Its not even or unique, its just generic. Its not bad tea, but at this point in my tea drinking life, I demand more from my tea drinking experience.

This is the only pu-erh I’ve had where I needed to rinse it out. That first steeping was pungent and overpowering. I was worried that just rinsing it out wouldn’t make much of a difference, but it did. The second steeping, first tasting, was delicious. I didn’t realize how much you would lose in the rinse, but all that is left is drinkable delicious tea. Every steeping there is a significant change in the intensity of flavor, but that initial taste stayed with me through every cup.

Cold Brew
I was really nervous about this cold brew since I don’t rinse the leaves before steeping. To my disappointment, there is hardly any flavor in this tea. None of the flavors are there, its just brown water. There is a very slight aftertaste, but nothing distinct. Usually the cold brew brings out everything I love in a tea, but this one was just a disappointment.

Flavors: Astringent, Compost, Dark Wood

Tasting #1 – Steep Time 2 Minutes
Light in color, a distinct roasted aroma is noticeable right away. Very faint flavors, indistinguishable from aroma.

Tasting #2 – Steep Time 4 Minutes
Darker in colosr, stronger aroma, but nothing new to add. Flavors are more distinct, but still of a roasted quality. Not like the toasted rice in genmaicha.

Tasting #3 – Steep Time 6 Minutes
The flavors have deepends, less roasted and more savory. Very comforting once it has steeped for long enough to experience all the flavors.

Flavors: Bread, Oats, Roasted Nuts, Toast, Wheat

Tasting #1 – Steep Time 2 Minutes
Very light aroma at this point, just a hint of sweetness over the scent of tea. The flavor is very similar to the aroma at this point.

Tasting #2 – Steep Time 4 Minutes
More sweetness in aroma now and rich in color. The flavors have melded together now so the sweetness and the tea are in balance.

Tasting #3 – Steep Time 6 Minutes
Very sweet aroma, similar to a peach now. Not sweet like candy, but ripe and nutritious. The flavor is more in the preference of tea and the sweetness is in the aroma rather than the flavor.

I’m always reserved about flavored teas, they smell great but I don’t need any added flavors. This tea doesn’t compromise the natural flavor of the tea leaves but adds a light complexity with peach flowers. Kinda like a silver lining in your tea.

Flavors: Honey, Peach, Sweet

Tasting #1 – Steep Time 2 Minutes
Very faint in aroma, and it actually smells like cannabis. Almost a clear color, barely any flavor other than the slight toasted flavor in the back of my tongue.

Tasting #2 – Steep Time 4 Minutes
More toasty in aroma, like burning greens. Smokey flavor, again most noticeable in the back of my tongue.

Tasting #3 – Steep Time 6 Minutes
Not much change in aroma, the color has deepened slightly.

This tea doesn’t taste grassy and vegetative, it smells and tastes like decay. I’ve never tasted a tea like this. I would say that every other tea I’ve ever had has always tasted lifeful and rejuvenating, and this is not that. Its complicated and conflicting, the flavor is good but I feel contemplative. Like wilting flowers, I know what was once alive but am faced with transition to death. This tea makes me self reflective and I’m finding a desire to create with my complicated feelings.

Flavors: Autumn Leaf Pile, Burnt, Cannabis, Compost, Decayed Wood, Dirt, Dry Grass, Hot Hay, Smoked, Toasted

Tasted at Josephine House in Austin, TX.

This was our pre-meal tea and it was deeply enjoyed. The tea was a beautiful vibrant green and although it was very grassy in flavor, it was very soothing, like the smell of a field after it rains.

Flavors: Petrichor, Sweet, Warm Grass

Tasted at Josephine House in Austin, TX.

I enjoyed this tea very much during my meal. The staff at Josephine House does all the steeping for you to make the perfect cup of tea. No loose strands to be found so no need to worry about over steeping. This was the tea I enjoyed during my meal, with its lightly smoky flavor and distinct woodsy taste.

Flavors: Bark, Oak, Smoked, Smooth
