The Red Queen Cupcake was inspired by one of Chef Chloe’s (winner of Cupcake Wars) cupcakes, which has a chocolate and espresso cake with vanilla frosting and fresh strawberries. The Red Queen Cupcake utilizes our Dinjoye Estate Assam black tea and highlights strawberry, chocolate, and espresso flavors. The espresso adds depth to chocolate flavor, while the strawberry adds sweetness and freshness. Mild vanilla, cream, and cake notes can be also detected. We highly recommend adding brown crystal sugar, which will produce a very decadent treat and will intensify the flavors and develop the vanilla.

Ingredients: Dinjoye Estate Assam, Chocolate Chips (vegan), Freeze-Dried Strawberries, Safflower, Amaranth, Organic Natural Flavorings (vegan)

Recommended Brew Time: 3 minutes
Recommended Amount: 1 level teaspoons of tea for 8oz of water
Recommended Temperature: 190 F – 212 F (boiling)

This tea is ridiculously good. I got a sample with my birthday order before the tea was named. I drank one cup plain a week or so ago and hoarded the other half of the sample till today, and I am drinking this cup lightly sweetened. To me the espresso manifests itself as just a richer deeper chocolate flavor. (kind of like a cake recipe I tried once with a tiny bit of espresso powder added, doesn’t taste like coffee, just richer chocolate! Don’t be scared, coffee haters!) The strawberry and chocolate seem very well balanced and with sugar the cake-vibe is definitely enhanced, though it was rich and creamy and VERY delicious even without. I love the assertive assam base. This is one of the best chocolate+fruit teas ever! Really great stuff. Can’t rave about it enough!

This is a really nice rich, deep, strawberry and chocolate noted tea. It is especially nice as many strawberry teas use light bases, whereas this one is rich and dense and malty. The flavouring and the base tea balance each other nicely.

The tea smells of ripe strawberry, strong dark chocolate/espresso, malt, vanilla and spice.

Malt, fruit and cocoa in the base mixes with chocolate flavouring in my initial taste and then opens up to ripe strawberry. Tannins and a mild astringency in the tea contribute to a bready feeling in the mouth. The strawberry is lightly mixed with a cinnamon spice note in the base and vanilla and cream notes. the strawberry is bright and ripe and slightly flowery. Espresso notes are present in a bitterness and slight nuttiness that mixes with the cocoa and malt and they counterbalance nicely with the sweet, bright, and soft top notes of the tea.

The tea resteeps well with strawberry and malt becoming more dominant and the tea becoming more astringent.
