Featured Reblend of May 2020!
This month’s featured reblend is one that I’ve been asked to reblend for quite some time. The thing is, I don’t always have white tea in stock. But, now, I have this BEAUTIFUL Bai Mu Dan – so I decided it was time to reblend this one … just in time for summertime iced tea brewing!
This blend was originally blended by Frank back 2011. His description of this tea goes like this:
Here’s our delicate and sweet Bai Mu Dan white tea blended with real freeze-dried strawberry bits, organic lemon myrtle and natural flavors. If it’s anywhere near as hot where you are as it is here (111° yesterday!), you’re going to want some of this deliciousness to cool off with. It makes a great, light, refreshing and thirst-quenching iced tea!
But don’t drag your feet! Like all of our Tea of the Week offerings, this is a limited edition blend. When it’s gone, it’s gone!
I changed the recipe slightly – first, I’m pretty sure that the Bai Mu Dan I’m using is from a different estate (which does make a difference). I also omitted the lemon myrtle from the original recipe, primarily because of the first reason – this Bai Mu Dan is so fluffy & the leaves are so large – that the lemon myrtle would simply sift though the leaves. Instead, I opted for lemon grass, which mingles with the Bai Mu Dan leaves much nicer. I also added dried lemon wedges to the blend.
It’s still DELICIOUS – dare I say better than I remember? To be fair though, it’s been so long since I’ve had this blend. This is really good though, sweet, light & so refreshing. Tart lemon with sweet strawberry – SO GOOD! It’s also VEGAN, organic, gluten-free & allergen-free!

I’ll be honest – I finished my test cup of this before I was able to write this review. I had to go and resteep the leaves to write this! It resteeps well!
The Bai Mu Dan is so light & has a crisp, fresh taste to it. The lemon is bright & a little bit tart. The tartness is softened by the sweetness of the berry. Everything is beautifully harmonious. So very nice!
to brew: use 2 1/2 grams of leaf to 12 ounces of hot water (165°F), steep for 3 1./2 minutes. strain & allow to cool for at least 5 minutes. enjoy!
This one is FABULOUS iced. It also resteeps well!
