Organic Sencha “Oku Hikari” – From Shizuoka, a unique breed of Japanese green tea grown organically. A first rate, first harvest, deep steamed green tea, the high quality is obvious from the first sip. Strong “umami” sweetness, a bit more astringent than average but very well balanced. As with many organic green teas, it is single estate and is not blended. Harvested from the first round of young spring leaves, it is certified organic. Nitrogen flushed and vacuum packaged, as fresh of an organic green tea as you can get.

A delicious sencha, that, when brewed at a lower temperature than recommended, offers up a lovely vegetal infusion (“cooked greens”) first time ’round, followed by pleasingly-astringent infusions with a mild “bite” subsequenely. A very pleasant tea.

First infusion – 5 g. per 8 oz. water, 65 deg., 45 sec.

Second infusion – 5 g. per 8 oz. water, 65 deg., 75 sec.

Third infusion – 5 g. per 8 oz. water, 65 deg., 10 min.
