White Peony, also known as Pai Mu Tan(白牡丹), is a sweet, mild tea made from plucks each with one leaf shoot and two immediate young leaves. The freshly harvested leaf is allowed to wither dry in the sun. The natural oxidation which takes place during this withering gives White Peony beautiful, plush flavors.
The aroma is fresh, mellow, floral with a note of cut hay and a malt undertone. Infused properly, it is an easy tasting tea that is fresh, slightly sweet, with medium body and yet light enough for all-day consumption.

This is the second kind of white tea I have tried. I’m not a tea expert, but I don’t think white tea is as bitter as other teas. It’s more delicate, I think. I’ve been trying to experiment more with different brews. I tried two brews: one with one teaspoon of tea and one with two teaspoons and slightly lower temperature. They tasted the same. They were good though.
If anyone knows a good way to brew this tea, please tell me.

The leaves for this kind of tea are pretty interesting with some small fuzzy ones and some larger ones as well. A fun tea to drink and I’m glad I got to sample it. So far (take this with a grain of salt, as I haven’t had much of either), I like White Peony better than Silver Needle when it comes to white tea.

Thank you Ost for the sale! I’ve recently been craving white teas more and more. If you think you don’t like white teas, the special ones will change your mind. This looks like a mixture of many different leaves: some fuzzies, some that look swept from an autumn forest floor. Tough to measure the amount, but I used a decent amount of leaves. The flavor is okay, maybe I steeped it not-to-perfection. The flavor is very light and has hay notes. There is more to it I can’t describe, so maybe my palate isn’t figuring this one out. A decent white tea to try out though.
