From Yezi Tea

This fabled Tieguanyin oolong tea hails from the mountainous Anxi County in the southern Fujian province of China. Also called The Iron Bodhisattva, it has been delighting tea drinkers with its heavy yet surprisingly sweet flavor since the early days of the Qing Dynasty.

The Iron Bodhisattva has a heavy body with notes of camphor balanced by a strong orchid scent. The tea is famed for its dark notes of caramel and refreshing aftertaste of honey. With its robust amber body and surprising palette of flavors, The Iron Bodhisattva loose-leaf tea is the perfect beverage to rejuvenate both your body and spirit in the sometimes sapping hours of the afternoon.

Use: 5-6 grams or 1-2 tsp. of tea
Water amount: 1 gram of tea / 30ml of water or 1 tsp. of tea / 3 oz. of water
Time of day: Daytime after meals
Temperature: 90-95 °C or 194-203 °F
Brew: 6-7 times
First brew: 45 seconds
Subsequent brews: Add 10 seconds

Tea brewing is an art – and you are the artist! Just as a jazz musician adds individual touches to make a composition unique, you can add your own individual flourishes to make your tea stand out. The guidelines provided above are derived from two time-tested principles: 1) The more oxidized a tea, the higher the temperature you will need, and 2) Smaller tea pots allow for more control over the brewing process and are especially recommended for lighter teas. That said, we encourage you to experiment with the amount of tea you use, water temperature, tea utensils, and infusion times to conjure up your own “Aha!” moment.

This is my favorite oolong and I am currently testing different brewing methods and thoroughly enjoyed today’s brew.

In a 10oz Teapot:

60 second rinse and discard

2:00 minute steep – lite yellow brew with a very floral aroma. Strong flavor with a slight floral taste and no bitterness.

2:30 minute steep – A darker yellow brew with a floral aroma but not as strong as the previous steeping. A much more robust flavor profile in this brew with a nice rounded flavor with a slight sweetness lingering on the tongue.

3:00 minute steep – same color as the previous brew with little floral aroma. This steeping was extremely smooth and buttery. A nice rounded flavor and a lingering sweetness that left me wanting more.

I’m looking forward to trying this in my new yixing and am thinking of buying a gaiwan soon as I have heard it is the best method for brewing a TGY.

Another excellent oolong from Yezi! I actually had this tea on two separate occasions. The first is what I took tasting notes on and is what I will report here. The second time, I followed the “proper” way, by doing a rinse, then a brief 1-2 minute steep, followed by another, etc. However, while this was nice, it really didn’t make a ton of difference to me. I did pick up more on the floral flavors with that first rinse, and that actually tasted better to me than the subsequent steeps. Anyway, doing shorter more frequent steeps like that still doesn’t provide a strong enough brew for my own personal preference, but I’m glad I gave it a try.

Okay, so back to that very first brewing, which was for 4 minutes. The liquor was a light pale yellow, and the aroma was soft, sweet, leafy, and slightly floral—kind of like a garden. The taste was light, clean, crisp, and just a little dry on the tongue and throat after it was swallowed. It was very tasty indeed! Yezi is right: it is perfect tea for the afternoon to help get over that post-lunch slump! It gently awakens the senses and brightens the day. Lovely!

Another fantastic oolong! This one didn’t have any butter smells or flavors at all. It was very strictly floral. Which I’m totally down with.
Though I feel like it has less depth, and is slightly less strong than the other Tie Guan Yin I had the other day from Yezi. Which is kinda sad, but I really like this one too. xD So we are all good, haha!

This Tie Guan Yin is the best one I’ve had yet. I will not go into much detail as I think Yezi Tea’s description of it is perfect. To summarize, it is very sweet and vegetal with light floral notes of orchid and a bit of a resinous camphor note. It has undertones of caramel and honey. Very sweet and rich oolong, love it!

My behind is currently parked in a chair in my back yard, drinking cups of this grandpa style with 205 degree water. I think this is one of my new faves, for sure. I’m on the 2nd steeping and there’s zero bitterness. Just a lovely floral sweet tone that has a very comforting effect.

This is definitely on my list of Comfort Teas!
