China Pai Mu Tan 1st Grade “White Peony”
Pai Mu Tan or White Tea is a speciality of Chinese Fujian province where the estates are situated at a high altitude of approximately 1500 meters above sea level.
Other names for this tea are “White Peony” (“Pai” means white and “Mu Tan” peony) and Bai Mu Dan.
It is really a type of green tea but made differently. Tightly curled buds are carefully picked with two or three tender young leaves to avoid any damage, then fermented shortly and immediately dried. As a result the tea leaves have the appearance of little bunches of silvery-white blossoms (leaf buds) set amongst light green and pale brown leaves with sweet and less “grassy” taste than green teas.
“White Peony” Tea is appreciated amongst tea connoisseurs who follow a healthy life style as this tea has the least caffeine than other teas and also has the greatest antioxidant properties.
For our shop we chose Fujian top quality “Pai Mu Tan” with beautiful large green leaf and many white buds. It has a very pleasant sweet, flowery, almost honeyed “muscatel” aroma and mild, slightly nutty flavour.
This is a special occasion Tea but also can be consumed as an all-day drink, preferably after your meal.
Brewing method: brew 2 teaspoons of Pai Mu Tan per cup of hot water (temperature can vary from 70C/158F to 93C/200F, depending on your taste). Infuse for 4-7 min.
