Pai Mu Tan is a Chinese white tea produced in the Fujian Province using traditional methods. The production process does not include heating and rolling, only withering and drying. Only large white leafs and silvery buds are plucked. The flavour is sweet, mild and delicious. The aroma is refreshing and the colour light and clear.

This was my first white tea and I was so disappointed. It was a bit expensive and I had high expectations. It has awfully lot of crushed big leaves in it and suprisingly few leaves and tips that look like white tea to me. I taste mostly those bitter crushed leaves in the tea.

This time I tried picking the best looking leaves and tips but it didn’t improve the taste much, but this time tea looked like white tea. I’m considering tossing this tea, because I very rarely drink it and don’t like it.

Tea becomes dark brownish (stays clear of course) when it gets cold.
