Gong fu this time.
1st Infusion – 30 Seconds:
Strong green tea flavor and astringency, which is pleasant albeit a bit coarse. The jasmine is present from nose to finish, but not all-consuming.
2nd Infusion – 30 Seconds:
I decided to come back to the same brew time as the first infusion after wash was a bit strong. Similar flavor just a little clearer.
3rd Infusion – 40 Seconds:
Really hitting its stride here, light on the front but heavy astringency on the back. There’s a lovely bright sweetness as it passes the tongue but the finish is a bit coarse.
4th Infusion – 50 Seconds:
The sweeter water adds a lot to this one. Thinking I need to move my steep time down while moving through the range of the leaves.
5th Infusion – 60 Seconds:
The flavor has fallen off now, but the irony is: at this point I am tasting a typical bagged jasmine tea brewed at regular strength. Which is to say, you really miss a lot of nuiance with some bagged teas.
