The east side of Hawaii island has deep well drained soils that are very acidic and very deficient in Phosphorous – perfect conditions for tea plants. One of the unique climatic attributes of this area of Hawaii Island is the night time wind that streams off the slopes of Mauna Kea mountain. This evening breeze is brisk and provides a deep cooling from the daytime heat. The tea is hand processed at an elevation of 1200mts. For a short period of time the tea is solar withered and then indoor withering over a period of a few days.
Brew: 1 tsp per 250ml, 5-7 mins at 90 °C (194°F) Good for 2-3 infusions
