From Seven Cups

There are many types of Mao Feng style tea in China, but Huang Shan Mao Feng is considered the very best. Our Imperial Huang Shan Mao Feng is completely hand processed using traditional techniques to craft an incomparable tea first made famous during the Qing Dynasty (130 years ago). This special processing allows the leaves to retain their original shape which is the character of Mao Feng tea. It is common to describe this shape as a bird’s slightly opened mouth or the look of a beautiful Chinese orchid. To create this tea, one slightly opened bud and one leaf are harvested for only 5-7 days during the Qing Ming within the picturesque Yellow Mountains. This green tea has a yellow hue reminiscent of ancient ivory. Take time to enjoy the magnolia aroma and light apricot tea color. This traditional tea has a mild and slightly sweet flavor perfect for those who want a high quality green tea without a bitter taste.

This is a very light and delicate green tea, almost too delicate for my liking. I get almost no flavor from brewing it Western-style. When I brew it in a gaiwan (3-4g in 150mL of 180 degree water), I get a fragrant, nutty brew that that endures three flavorful steepings. Maybe it’s just this year’s harvest (2011), because I have tried previous years, and they are much more flavorful.
