Tea of the Week for August 10, 2020!
If you’ve been at all familiar with our line-up of unique teas, then you’re no stranger to our Pancake Breakfast – it’s one of our most popular blends & for good reason! It tastes like a stack of pancakes drizzled with melted butter and maple syrup – liquified right into a cup of bold black tea. As much as I love me a stack of fresh, hot pancakes with butter & maple syrup – I prefer my stack of buttery pancakes to be topped with sweet, juicy strawberries!
So I thought it was about time that I craft a Strawberry Pancake blend. Some of you may remember the green tea version that Frank created back in 2011 – I enjoyed that blend quite a bit! But I decided I wanted a black tea version of that tea.
I started with a blend of Assam, Ceylon, Keemun & Yunnan – heavier on the Assam because I wanted some of that malt to shine though to enhance the pancake-y notes a bit. Then I added plenty of strawberries because when it comes to pancakes topped with strawberries, the more strawberries the better! I finished it off with some pancake essence plus just a hint of buttery essence.
This is a lovely, invigorating cuppa that will start your morning off right – even if you don’t have time for that stack of golden brown pancakes topped with strawberries, you can enjoy a cuppa instead! It’s organic, VEGAN, gluten-free & allergen-free too!

Wow! I’m a happy sipper right now! Let’s be real – I’m generally a happy sipper when I have a freshly steeped, hot cuppa tea in front of me.
The strawberry notes are just so nice here. Generally, when I think of a stack of pancakes topped with strawberries, I’m thinking a bunch of strawberries – fresh strawberries with just a teensy bit of sugar to encourage the juices to develop – with those deliciously sweet juices soaking into the pancakes so what you taste is STRAWBERRY with some pancake – and not the other way around. That’s the way I like it.
And this cuppa delivers on that flavor I want. Sweet berries with just a hint of that tart tingle on the tongue in the finish. A touch of butter & spongy, slightly starchy pancake. This is a new way to do breakfast tea!
to brew: Use 3g of leaf to 12 ounces of nearly boiling water (205°F) & allow to steep for 2 1/2 minutes. strain & allow to cool for about 10 minutes. enjoy!
I know that as a general rule, I suggest a cool time, but the cool time here is especially significant to the outcome. I prefer this tea hot because PANCAKES but – allowing it to cool about 10 minutes will result in a much more flavorful cuppa. The strawberries POP & the hints of butter shine through – as does the pancake-y notes. SO GOOD!
