27 Tasting Notes
Bought this herb for allergy seasons, spring & fall for me. It works quite well for coughing, as the native Americans knew. It is an ingredient in may commercial cough syrups, but this tea works just as well, plus it is comforting. My father used to mix bourbon, honey & lemon. I do the same, then add it to this tea.
Mmmmmmm. Mellow, mushroomy sip of umami. And comforting, like my mommy : ) Earthy and yet clear, not muddy or musty. I love it and hope to always have this tea in my cupboard. I’m hoping Brenden will re-blend this one again soon.

Nice everyday morning tea at a good price. Reminds me of Copper Knot Hong Cha, previously carried by Teavana, back when it was an Atlanta start up boutique. Although I haven’t shopped there in years (since they discontnued my 3 favorite teas, (before they sold to Starbucks), I have missed their CKHC and this tea is a very nice replacement. Smooth, fragrant, malty & chocolatey. Holds up well wth milk & sugar. Also good s straight up.
I’ve been dating SBY for a while now and am now committed to a permanent relationship. It has taken me a while to write a review, as this charmer is quite the chameleon. The flavor profile changes dramatically over the successive steepings, as well as through the temperature changes during each steeping. Early steeps are quite spicy, becoming more fresh, sweet and subtle over time. I orders 2 packages and am aging one and drinking the other. I’ve also ordered these intriguing buds from another company for comparison. I love this enigmatic generous tea.

The first steep is pure heaven! Fresh baked biscuits with sourwood honey (from Savanah Bee Company – try it!) accompanied by creamy cacao & sweet potato. The scent alone is worth the price of admission. That being said, I was surprised that the second steep had lost all of the baked biscuit goodness to be replaced with a burned ash taste. An “off” flavor for me. Still drinkable, but not enjoyable. I lost interest on the 3rd steep & discarded it. I brewed in my Breville at 195° on my second morning with this tea. The first brew at 205° resulted in some slight bitterness. If the 2nd and 3rd steep had been better, I would have given this tea a perfect score. Will I purchase again? Yes, but for that first steep only, making this less economical than anticipated.

Preparation
Love this kettle. I rarely use the pre-set features & brew according to the vendor’s recommendations. I have had no problems with water quality (filtered from fridge) nor hard water deposits (our water is soft here). When there is tannin build up (there will be with heavy use), the Breville organic tea cleaner works great. This unit is a must when I have company. I really LOVE having the ability to quickly brew water to an exact temperature when using my other teaware. I have had this unit for about 18 months.
I think this tea may be the ideal tea to help a coffee drinker make the switch to tea. Very roasty & coffee like with hints of caramel & cocoa. I’m fairly new to oolongs, so I won’t rate this tea yet, however I like it with cream & sugar as a dessert tea – the way I drink coffee, if tea is not an option.
