This tea has a slight smokiness and earthiness I am not accustomed to in Matcha. I found it to be missing some classic flavor I was expecting, but it is unique and delicious in its own right.
This is a high quality matcha for drinking. Its fragrance is very mellow, reminiscent of powdered chocolate. In the mouth, it is very sweet and dense, but the sweetness is harmonious: it is not cloying, and in the background there is a little touch of a something stimulating.
Perfect for a fine “usu-cha.”
Quantity of leaves*: 2-3 g / scant tsp per person
Quantity of water: 70 ml / 1/4 cup per person
Water temperature: 70°C / 158°F
Preparation advice: Start by rubbing the bottom of the bowl strongly but slowly with the chasen (bamboo whip) to make sure the matcha melts into the hot water and does not form lumps. Next, holding the chasen loosely between the thumb, index finger and big finger, beat the liquid very strongly. The movement should come from the shoulder and elbow rather than from the wrist. Finally, when enough foam has formed on the surface, beat at medium speed to produce finer bubbles.
