From Tea Mountain

This year’s trip to Georgia brought us a lot of inspiration, admiration for the local people and fascination with unspoiled nature. There aren’t many places in the world where hectares of burnt tea trees that have grown into a forest and actually become a forest remain. To do so in the untouched nature within sight of the snow-capped peaks of the wild mountains of the Little and Greater Caucasus. From here, from the Guria area come the tickets for this white tea, which is produced by our supplier Dato in a simple home tea workshop, of which you will find several in this area. The tea could be included in the Gong Mei category (two leaves and tips). After pouring, it gives us a soft, light, but full, sweet infusion of light yellow, initially green-yellow, later golden-yellow color. The aroma is delicate, pleasant, herbal floral, delicious. It is suitable for single-pot preparation as well as for gaiwan or small teapots for multi-infusion preparation, where it gradually develops to its depth and unobtrusive power.

Cultivar: the original tea trees made of Chinese seeds, which planted and the seeds themselves multiplied in the forest, the locals call it Kimin, and most likely it is Keemun, which was originally planted here on a large scale.

[Spring 2022 harvest]

Great warming and crisp white tea with some green edge to it. The mouthfeel is a little too watery for my liking, but otherwise I like it a lot.

The aroma is a mix of peas, squash flowers, pancake, and thistles. Taste is bright and savoury with good umami and grassy sweetness as well as notes of sand, shellfish, apple leaves, and rapeseed flowers. The aftertaste is sweeter with a fruity apricot note present.
