A beautifully bright fragrant rare tea from the Himalayan kingdom of Sikkim.
What it is
Temi 1st Flush is officially a black tea, but is less oxidised and much lighter than usual blacks – to drink, somewhere between a black and a green tea. Its grade is SFTGFOP1 (standing for Special Finest Tippy Golden Flowery Orange Pekoe grade 1). A bit of a mouthful but it makes for a lovely tea!
Where it’s from
Sikkim, not long ago an independent Kingdom in the Himalayan region of northeastern India, bordering Nepal, Tibet and Bhutan.
It’s story
The Temi Tea Estate is the only tea garden in Sikkim and is considered to be one of the best in India. The climate in Sikkim ranges from sub-tropical to high alpine and the slopes of the Himalayas produce some uniquely flavoured teas.
Why we chose it
As with Darjeeling teas, the Temi 1st Flush is thought to be the best, with an abundance of young tips adding to the delicate character of the tea. It produces a lighter tea perfect for drinking when the temperature rises and you don’t want anything too heavy. A rare tea and one we had to bring you.
What it tastes like
A really bright sun-coloured orange liquor produces floral and ripe fruit notes, not unlike a Darjeeling First Flush – but perhaps a little more exciting, with lightly spicy notes, a hint of honey and a slight astringency. It has a lingering tropical fruit aftertaste.
Drink it with
Delicate flavours – summery salads or afternoon tea with sandwiches and cakes, English cheese or creamy Camembert.
How to make it
Use one heaped teaspoon per cup. Let freshly boiled water cool slightly to 95ºC and then brew for three minutes. Generally served black but could take a splash of milk or slice of lemon if you prefer.
