Dejoo Estate SFTGFOP1 - Assam Black Tea - Second Flush, 2013

Appearance, Flavor & Aroma:
The dry leaves of this Dejoo Tea Estate Second Flush Assam are classic black with a healthy amount of gold tips and sweet, woody aroma. The bright reddish-amber infusion is brisk, smooth and sweet with a mild dose of Assam’s characteristic malty flavor, lovely fruity overtones and a hint of caramel. This is an excellent tea on its own, but it takes milk and/or sugar quite well.

Estate Information:
Dejoo Tea Estate lies on the border between Assam and Arunachal Pradesh to the North, where the foothills of the Himalayas start to rise from the Brahmaputra River valley. It is located on the north bank of the Brahmaputra River, just to the northwest of the city of North Lakhimpur. Nobody really knows the precise origin of the name Dejoo, but, according to the estate’s owners, the name Dejoo either evolved from the Bhutanese & Tibetan word “Dzong,” which means fortress, or the name came from the combination of the local dialect words, “Di” (water) and “Zoo” (the local rice liquor).

Steeping Guideline:
When infusing an Assam tea, a Western-style approach is the way to go. We recommend using 3 grams of leaf per 6-8 oz cup (approximately 2 teaspoons), water at a boil, and a 5 minute infusion time. Please be sure to adjust the amount of leaf, steeping time, and/or water temperature according to your taste.
