We were intrigued at the prospect of a Taiwan grown Assam cultivar and what the terroir and processing might imbue to the cup. Grown in Yu Chi, Nantou by farmers who prefer the traditional methods of tea processing for the most flavorful results. Unlike classic cut-tea-curl or even orthodox full-leaf Assam tea production, this tea boasts long leggy dark leaves that are impressive to view with lots to offer in the cup. They infuse to a medium mahogany infusion color with deep complex notes of honey, spice, malt, and molasses, with a caramelized sugar finish reminiscent of cotton candy. Super smooth, no briskness but lingering caramel sugar notes. Explore with gong fu brewing or try a classic western brew. Either way, savor and enjoy every nuance.
