We have a limited quantity of this exquisite tea to offer. Alishan is a region in Taiwan known for its natural beauty and, since the 1980’s, its climate perfectly suited for growing interesting tea.
Anyone fascinated with “Milk” style oolong will want to try this Alishan. There is a subtle toasted charactaristic that augments the creamy and floral flavors so nicely. We had a lot of fun trying to describe this combination to one another in the shop. What does this remind us of?…toasty, fruity, creamy, subtly sweet…memories of a coveted breakfast cereal from childhood! After that realization, our discussions of orchid and creme brulee seemed pointless. Wherever this tea transports you, we’re pretty certain you’ll go there with a big smile on your face.
We recommend doing one rinse of 5-10 seconds (at 195 degrees) and then beginning with a couple 30-second infusions before slowly increasing steeping time. We also got great results with using hotter water (at 208 degrees) for long infusions of 2 minutes or more. If you have a yixing pot for high mountain oolongs, all the better.

Steeped this one in my gaiwan complete with rinse and more leaf and all that—I’ve decided for straight oolongs that’s my method of choice (have had some truly mind blowing experiences that way). It is toasty, like toasty cereal, plus creamy/buttery in that vaguely savory/salty way many oolongs seem to me. It’s a nice specimen, but I’ve noticed I just don’t seem super into the classic high altitude “shan” oolongs. They’re never bad, just kind of unremarkable to me—I think their particular flavor and texture qualities just happen not to interest me much. But again, this is a good specimen of the type if you like them. I agree too this shares qualities—the creaminess mainly, which builds along with a clean almost fresh milky taste upon multiple resteeps—with Mandala’s popular Milk Oolong. I enjoyed the third and fourth steepings best, when that “fresh clean creamy milk” flavor came out.
I agree with ifjuly that the first couple of steepings didn’t do much for me. Just a bit too delicate for my tastes, I guess. On the third steeping, I finally got that base note that hits me in the chest in a good way. The fourth was sublime, with high/low/salty/sweet complexity firing at me, though in a more delicate way than Mandala’s milk oolong. I think I’m going to have to put this one away until I’ve developed a more sensitive palate. Right now, I prefer the more obvious pleasures of milk oolong, but who knows how long that will last.

This was from last night, and unfortunately, I can’t remember a lot about it anymore. It was really nice. Fairly buttery. A little bit nutty.
And then once I got that pulled pork in my mouth, everything else was forgotten. It was GOOD. Moist, succulent, juicy, smoky, tasty. It just took a little longer than we planned is all.

I don’t remember how exactly I steeped this one, but I didn’t use too many leaves to save some for others and might have filled the mug too high on accident. I just wanted to note mainly that WHOA this one is very nutty when it is cooled! I’m not sure if that is usual for Alishan, since as far as I know, I’ve only tried one oolong labeled ‘Alishan’ and that was from the Butiki teabox. I don’t remember it being particularly nutty. But this one is also very sweet and buttery, so the kettle corn comparisons I’m seeing are accurate! (Now I want kettle corn!) The second steep wasn’t as flavorful, probably steeping it incorrectly though. But if you’d like a nutty oolong, try this one!
