White cedar, also known as eastern white cedar, is a tree found in abundance in Quebec forests with a highly valued aroma and benefits. First nations have long used it to treat headaches, fever, inflammation and rheumatism. Its branches are also antiseptic and are therefore antiviral. It is used as an infusion to counter bronchitis, colds, respiratory problems and is sometimes present in some cough syrups. It is also possible to use it in steam baths as a substitute for eucalyptus.

What Does Cedar Taste Like?
This very fragrant plant gives off aromas of resin, but quite different from the smell of the fir or spruce. Its taste is very balanced with citrus notes. Slightly sweet, it is used whole to flavour soups or powdered to add to bread dough and cookies. This foliage is a good source of vitamin C.
