Very modern; their teas are apparently 1:1 farm-sourced, and all of the brewing is done in these app-controlled vacuum machines set up behind the bar (pictured on their site). Takes longer than a single gongfu infusion, but less than a traditional western tea wait-time. Jury’s still out on whether it improves or detracts from the taste, but I ordered their moonlight white while there and thought it turned out quite nice.
