Gyokuro means Pearl Dew and is one of Japan’s best teas. This tea is produced by shading the bushes for the first three weeks of May while the year’s first flush develops. This causes the plant to produce additional chlorophyll, which makes it a darker green than other teas but lowers the polyphenol content, giving it a sweeter milder taste. This process inhibits astringency and also creates large amounts of the amino acid L-Theanine which contributes to the umami flavor and creates a sense of well-being for the drinker.
