I love Canton Tea Co. Everything seems so personalized. I love the handwriting on the labels, the non-uniform sizing of the packages. It feels so human and makes me feel so connected. Most of all, I love the tea.
The dry tea smells woodsy, almost like cedar, but with a deeper aroma. It implies strength. I love Dan Cong and am looking forward to this one.
190F(87C)/2 min – Because of the strength of the dry scent, I went with a lighter steep time and temp. The scent is now… sweet?! Yes, it has a sweetness to the scent, almost like peaches, but really ripe peaches. The taste has that peachy flavor (not the sweetness, but the essence of peach) with lychee, too, and it also has a slight vegetal flavor as well. It’s the fruitiness that’s throwing me. It’s delightful! The tea still has that woodsy taste that I’d expect from its initial scent when dry. It’s not bitter or astringent and I’m glad I adjusted the steeping parameters. It’s a perfect morning tea!
I cold brewed a darjeeling once and I didn’t really like it…
My spreadsheet informs me that yes, you did send me some of this! I will have to try cold-brewing it :)

For each swap, I have the name of my swap partner, the date I sent off my package, a full list of the teas I sent, separated by “requested” and “surprise” (just differently coloured), the date I received my package (or close to), a full list of teas I received, a “tried” column, and a “gone” column, so I can keep track of which samples I should have lurking about somewhere. I want to add a column to note if people have review teas I’ve sent, but I haven’t bothered with that yet. :D
My other spreadsheet of all the teas in my cupboard has tea name, type, company, approx purchase date, swap from (if applicable), original size, remaining size. I know some people keep brewing parameter notes and whatnot; I rely on Steepster for that info. I wish I could easily download all my Steepster tasting notes + comments into a Word document.

Hahaha, I like organizing things like that. I really should find a job where that’s mandatory :D
