Tea of the Week for April 24, 2023!

One of my favorite desserts is a baked custard. It’s not something I make for myself because it’s work & I know that if I were to devote the kind of effort into making a baked custard – I would end up eating all of it. All. Of. It.

So, for the sake of my health and waistline, I avoid making such a catastrophic choice. Instead, I’ve decided to focus that energy into making a tea that is similar to a custard, but with far fewer calories & fat. You know, something I can call healthy. I mean, this is no salad, of course, but as far as something that tastes like custard – this is the healthy alternative to consuming an entire baked custard.

This blend starts with my beautiful organic genmaicha base. I then added some vanilla beans & my special brown butter custard recipe of essence & infused it with matcha. Finally, I added some vegan brown butter candy crystals (not a lot – but just enough to enhance the flavor without making it too sweet). It’s so good! It’s also vegan, organic, gluten-free, allergen-free & all natural!

more about this tea: I really love how this tea turned out. It has a soft, creamy texture & flavor with a brown butter/burnt sugar toffee kind of flavor. So satisfying for when your sweet tooth is begging for something sweet, smooth & creamy!

to brew: shake the pouch well to ensure that the small fragments of the candy as well as the tiny vanilla beans are incorporated into your measurement. Use 2 ½ to 3 grams of tea to 12oz of very hot water (175°F). Steep for 2 minutes. Strain & allow to cool for at least 5 minutes. Enjoy!

serving suggestion: as with most of my creamy, vanilla teas (& probably most teas in general, really) I prefer this hot but it’s also really good cooled. I tried it unsweetened & it was quite nice, and I also added a teensy bit of sugar (less than ½ a teaspoon) & found that with the sugar addition, some of those sweeter caramelized brown butter notes came forward a bit more than with the unsweetened cup – so if you’re looking for more of a dessert-y taste, try adding a little bit of sugar but not much as the candy does add a little bit of sweetness to this already.

Once this cooled down, I tasted something like brown sugar maybe, but without the sweetness? Ha maybe that’s brown butter. I wish this were more desserty and decadent. The last time I had this, it tasted a little watery and empty. Still worthwhile, just not a favorite.

I think I’ve mentioned here that I’m in grad school for social work as a major career pivot. Well, today I had my first therapy client during my internship! Suddenly it’s all real. :) And now I’m drinking this tea because it feels indulgent and celebratory. It’s very silky and just a bit creamy, although it’s weirdly making my mouth tingle a bit? The brown butter notes are understated toward the end of the sip. It’s interesting because I feel like this could easily go toward a “buttery popcorn” flavor profile, but it manages not to do so.

This was one of our blends from April. It turned out so much better than I ever imagined it would. Sweet, slightly nutty (from the toasty notes of the genmaicha) and silky smooth – it actually tastes like liquid toffee! I’m going to be sad when I run out of this tea!
