Pai Mu Tan is an exquisite white tea with a very light colour and a natural fruity flavour. Believed to be high in antioxidants, it is a refreshing drink for any time of day.

It is grown in the mountains in the Fujian Province of China. Also known as White Peony, it is made from the silvery buds and first two leaves of each bush, harvested in early spring when the leaves are most tender. This tea is dried in the sun as soon as it is picked, to capture its fresh sweetness.

Pai Mu Tan should be brewed very lightly to make a pale green infusion with a mild sweetness and complex honey aroma often compared to muscatel wines.
