From The Whistling Kettle

While it is only in recent years that the GojiBerry has begun garnering attention from mainstream health and wellness writers,the berry, which is actually the fruit of the Lycium barbarum and Lycium chinense bush, has been getting rave reviews in China since at least the Tang Dynasty (618-907).

During that time, poet Yu-Xi Lu wrote a poem in which he claimed that simply drinking water from a well near a Goji berry bush could help extend your time here on earth. But appreciation for the fruit didn’t stop there. A few centuries later in 1578, one of China’s greatest herbalists, a man named Shih-Chen Li, published the Materia Medica. In the book, Li notes that people from the village of Nan- Qiu were in the habit of doing two things:

1. Eating a lot of Goji berries. 2. Living an incredibly long time.

Fast forward to the present. These days, Goji berries seem to be appearing just about everywhere, in juices, hair products, foods and now…exceptional luxury teas. And why not? Recent science has shown that the berries are loaded with vitamins, antioxidants, minerals and more, all geared toward harmonizing the body and making people feel great.

Hot tea brewing method: Traditional method When preparing by the cup, this tea can be used repeatedly about 3 times. The secret is to use water that is about 180°F/82°C**. Place 1 slightly heaping teaspoon in your cup, briefly infuse with freshly boiled water and then pour off. Re-infuse the tea and pour after about 1 minute or longer to taste and then begin enjoying a cup of enchantment. Do not remove the leaves from the cup. Adding milk and sugar is not recommended. Once the water level is low add more water, and so on and so on until the flavor of the tea is exhausted.

This tea is a great example of how important it is to get your water temperature correct!!
I had this tea a couple of times and didn’t really enjoy it. It has almost a soapy taste and was overly floral. I really struggled to drink it, even with added sugar. Then I got a variable temperature kettle. I had been brewing this tea at a cooler than boiling temperature, but probably closer to 190. It really needs a temp closer to 170-180. What a change!
I made an infusion this morning at 170 and mixed in a small spoonful of honey. I then made a second infusion at 180 and mixed the two. It was smooth and lovely.
The taste is very fruity and floral. Due to the calendula and sunflower petals, it is also smooth. I think the base is tea kwan yin, as it has a little roasty character. There is a light and pleasant mineral aftertaste.
This has become a tea I can enjoy! Thank goodness for variable temperature kettles!
