This certified organic tea was picked in late Spring by a small-scale farmer in Dong Ding. This is a special production which happened as the insects started to bite his tea crop. Instead of compromising on his organic morals, he picked the leaves and processed them in a similar fasion to Bai Hao Oolong (Oriental Beauty), finishing them off with a nice charcoal roast in the traditional Dong Ding fashion.
The result is a ~60% oxidised tea, with a nice roast and lots of character. As the days have been turning colder here I’ve been drinking this quite a lot and really enjoying it. The taste is smooth and sweet, with several layers of honey flavour, a clean, exceedingly pure, mouth and throat feel and a long lasting huigan (aftertaste).
