The mountain Ali Shan is famous within Taiwan and amongst tea lovers worldwide. Located in Chiayi on the southern part of the Central Mountain range, the climate and altitude of up to 2300m is ideal for the tea plant to grow slowly and produce tender, flavourful leaves. Temperatures are low and its humid and foggy which makes for perfect conditions and creates teas vivid personality, exotic flavors and aromas. The infusion has a yellow, pale colour and a light orchid aroma. The flavour is lightly sweet, balanced and complex. This tea is a real treat for the oolong lover.

Awards: 1st place winner of the 2020 Toronto Tea Festival

Ingredients: Oolong loose-leaf tea

Cultivation & Certification: Natural (Organic cultivation but no certification)

Brewing instructions: Measure 6 gram per cup, brew at 90-95°C/ 194-204°F for 1 minute. Good for up to seven infusions. Add steeping time with each brew.Tip: pre-warm tea pot/cups before brewing.

Gongfu!

I’ve been in a real oolong kind of mood this week. In particular, it’s greener and more floral leaning oolongs that I’ve been reaching for and the highly aromatic, lush notes of orchid, elderflowers, and lilacs are so spot on for that craving!! In addition, the medium bodied liquor has the perfect soft and buttery mouthfeel with a sweet, crisp finish – like iceberg lettuce, but in the best way. I kind of feel like the Very Hungry Caterpillar (y’know, from the children’s storybook) just going to town on all the garden flowers and veggies, and I’m so completely NOT mad about it!!
