We teamed up with a young farmer whose family has been working on “Mountain Tea” for decades. Family Hsu lives in the valley of Liugui and have a great connection with local indigenous Taiwanese, who knows where those wild tea is growing at in the mountain.

The material of this tea, like “Assamica Guardian,” came from the protected area inside a national reserved area. Tengjhih has tea trees that grows very tall that requires professional to climb the tree to retrieve its leaves. The tea trees are also very old, we guess it could be over 300 years old at least judging by what we could feel from it.

Like “Assamica Guardian,” we knew there was more potential to discover if we make this material into a oolong instead of just black team, and so we did. However, as the tea was withering into the big waving stage, we discovered that a crucial tool – big waving machine was broken. Completely broken. “Ah, I am very sorry about this. I guess we haven’t been using that for a while, so nobody noticed hahaha.” Mr. Hsu’s brother apologized as we shockingly realized what is going to happen next – without a big waving machine, we have to done it all by hand.

So we continue our work nonstop after everybody went to bed. “Assamica Ruby” was also being crafted at the same time so there was no time for complacent. We worked until the morning to begin the fermentation, and we did not know what this will turn out to be. Will it be another “Assamica Guardian.” or something totally new?

It turned out that, thanks to the big waving done by hand, this tea became something a bit similar to Oriental Beauty. But what was surprising was not the taste (even though it is deliciously interesting), instead is how this tea will make you feel from head to toe. We can confidently say that we just created an unprecedented tea this season. To be honest, someone in the team was not quite willing to let go of this tea, but at Taiwan Sourcing not just for its rich hawthorn fruit aroma, However, we believe tea lover deserve the best of the best, and we know you will understand what we mean once you take this.
