From Simpson & Vail

Olive leaves comes from the olive tree (Olea europaea), a small, evergreen tree, that was native to Mediterranean regions and is now cultivated in areas of the US, Europe, South America and Australia. While the fruit from the tree, olives, and the oil pressed from olives is more widely used, the leaves have historically been consumed for medicinal properties. Olive leaf infusions have been primarily overlooked in the US, however they are frequently drunk in countries where olive trees grow. The leaves have been brewed for their medicinal properties for thousands of years, and in recent years researchers have begun testing to verify some of the wonderful claims.

Olive leaf brews to a golden cup with a fresh, clean, refreshing taste when steeped at 5 minutes. Steeping longer will result in a more bitter brew.

Brew leaves at 212º – steep for 5 minutes.
