Ali Shan High Mountain Oolong Tea grows in the cloud-covered mountains where mist lingers all year round. Sunlight is plentiful during the morning; in the afternoon, winds blow and clouds swirl over the slopes, refracting sunlight into a pale diffused light through the mist. As the temperature drops sharply, the growth of tea bushes slows down, causing the cell walls in the leaves to become more compact. The leaves consequently become larger and thicker.
This is sometimes referred to in Chinese as “mountain fog tea” due to the mists that envelop the tea gardens, found at elevations from 4,000 to 8,500 feet. The abundant moisture, gentle winds, and organically rich soil are extremely suitable conditions for the natural growth of these hardy tea bushes.
Thickened leaves of the finest quality are picked by hand before undergoing the transformation into ball-shaped, emerald-colored Oolong tea in a cool and natural environment. After being brewed with water, the green tea’s sweet and mellow taste and exotic faint fragrance can be enjoyed. The tea is high in antioxidants and great for body detoxification. High mountain teas possess a great aroma and a delicate, sweet floral taste.
