From Palais des Thés

Flowery tea blend inspired by a secret Tibetan recipe.

An ancient legend tells of how the Tibetan monks would prepare this blend of tea, plants and flowers in the greatest of secrecy. After several days of soaking, the leaves were carefully plucked out and put to one side.

By this mysterious alchemy, the monks turned the tea into gold and gave it its exceptional scent.

Black and green tea blend.

In French, Thé des Moines means “Tea of the Monks”.

Delicious with dark chocolate!

My very first Palais des Thés experience, I have to say that Thé des Moines is a very pleasant surprise!

I was concerned that this black and green tea blend would pose brewing challenges, as I have found it tricky to negotiate the parameters for Tazo Joy, which combines black, green, and oolong teas. I read somewhere that the best approach to these sorts of teas is to brew conservatively, as though the entire blend comprised only the most sensitive tea.

When I smelled Thé des Moines, however, it was so reminiscent of Earl Grey cream teas that I threw caution to the wind and brewed up a small pot as though it were completely black. Boiling water; 5 minutes.

The result was remarkably good, so good, in fact, that I enjoyed the entire large glass of dark amber liquor without adding any cream, which is a real rarity for this Earl Grey amateur. I usually take a sip or two of a new Earl Grey before adulterating it, but in this case the brew was so tasty that I preferred to drink it au naturel!

The flavor is subtle and smooth, with all of the beauty of an Earl Grey cream but without the usually mediocre base tea. Very tasty. I was thinking about reinfusing the leaves, because so many of them are obviously green, but then I decided to drink a suite of new teas on this cold, gray day. I’ll try multiple infusions next time.

For now, I am glad to have a beautiful clay potful of this unique blend! The recipe appears to be a carefully guarded secret, but clearly bergamot has been added, along with a smidgeon of vanilla or something else which gives it that “creamy” taste. The black and green tea leaves are visible, so no debate about those ingredients, though it’s unclear which black and green teas they are…

This is my first black tea in five days! Sadly it’s a little lackluster for me. There’s a honeylike sweetness to it, but it leaves my mouth feeling powdery. The taste is also weaker than I’d like. Maybe it could be saved by overleafing, but I only have enough for one cup. Oh, well.

PdT can be so hit or miss. But if you can ever lay your hands on their green pear tea, go for it!

The aroma is very intense and that is one of the things I like about this tea (though otherwise I’m not so fond of aromatic teas). This tea is also the most popular when I invite friends – I don’t have Teekanne style teas and the The des Moines smells better than Lung Ching or Tie Guan Yin, so normally, they prefer this one.

This tea has a delicate, sweet, unique flavor; I find that it doesn’t even need sugar or honey (unless my sweet tooth is really acting up). It has all of the best characteristics of both sencha and Ceylon, although I’m not sure exactly what type of black tea is used in this blend. My guess is Ceylon. I can’t seem to find any details!

It was one of my favourite flower tea until I drank the Thé de Lune from Mariages frères… But price range is different so in his category, I’d say Thé des Moins is a very nice tea to drink at all time of the day ;)

This is my favorite tea. The taste and the smell is very relaxant and it gives me positive energy for the whole day. I prefer it in the morning but sometimes I drink it all day long.
