Honey Black Tea is rare in the supreme black tea market, as it can only be processed from leaves grown without pesticide and naturally fed by a particular insect, the Jassid cricket. The Jassid’s bite initiates a chemical reaction that creates the special honey fragrance of this tea.
 
The Master’s Background:
This tea is from a historical tea farm which has won numerous tea awards in both Taiwanese and international competitions. The 4th generation tea master follows his family’s secret tea processing tradition to turn hand-picked top sets into award-winning tea, including the Gold Medal first prize at Tian Xia Ming Cha Da Sai, which means World Tea Competition, in 2006, Black Tea category; and the Silver Medal in Kai Jie Bei, or Champion Competition, in 2007. 
 
The Experience:
Formosa Honey Black Tea yields a rich and delicate honeyed liquor, not as astringent to taste as common black tea, and needing no assistance from milk and sugar. Its silky smooth texture stays with you as you move through the complex notes of the third and fourth steeps, but it is important to brew this tea properly. If you are just starting out with Chinese teas, we recommend cold-brewing this tea, to get an idea for its potential. When you do move to a hot brewing, make sure the water sits a minute after boiling, and watch out: too long a steep will make a very strong cup!
