From Mandala Tea

Keemun is the most famous of Chinese black teas and the most popular throughout the world. It is wildly popular in Europe where it is used as the base for the English Breakfast blend. It is a mellow tea with reddish-brown liquor and has a lasting aroma.

Black tea is produced by fully oxidizing a tea leaf once it has been picked. It is a heartier tea and should be steeped with higher temperature water. You will likely enjoy doing only a few longer steepings, but black tea can be prepared Gong Fu style.

Basic Brewing Instructions:

Black tea should be given a 10-15 second rinse with the same temperature water as used for brewing. 208˚ F water temperature. (Just below boiling.) Use 1 teaspoon per 8oz. of filtered water Recommended first steeping of 1minute. Add 1 minute for each subsequent steeping up to 5 minutes. Alternately, try one long steeping of 3-5 minutes. Tea brewing is meant to be a joyful exploration. There are no hard and fast rules. Experiment with the quantity of tea that you use, and steeping times. Enjoy discovering what your preferences are. They may change day to day.

SIPDOWN! (234) Thanks again to terriharplady for being so awesome! I’ve really enjoyed this one from Mandala even though it’s not my all time fav keemun. This is a cup that i could enjoy most days because it’s that kind of tea that doesn’t deman attention but is still flavourful and is enjoying to drink. I’m working from home today so look out cupboard! i hope haha

I think I’m finally gonna get some serious tea drinking done today too. I’ve just spent the morning sipping & relaxing while 2 of my ladies practiced duets for a performance they have this sunday. I didn’t actually have to do anything, except help with the counting of a few measures of one song. Otherwise, relax. I’m so glad this is my job! :D

I want to start off by saying that Garret is awesome! I’ve never met him in real life, of course, but I can tell that he is an awesome guy. He always throws a little something extra (really, more than a little!) in the box, with a personalized note (not just “thanks for buying more tea”), AND his teas are tasty! I loiter on his site often, building up shopping carts, & then making myself close them because I already have a ridiculous amount of tea here. There is a very special tea set on his site that I’ve been fawning over for quite some time (& struggling right now to not go put it in my cart…aughghghg….it’s just so… lovely….I…want…)

So last friday in my tea buying frenzy (you know that saying, “No one can eat just one?” Of course, they are referring to potato chips, but it translates for me to not being able to place just one order for tea…Yeah, I can hold off for months, but like a binge drinker, which I was long ago, once the wall falls & I place that one order, lookout!), I ordered a lovely selection of black teas from Mandala, because face it, black tea is my true love & will forever be.

I enjoy Keemun. It’s a really nice grounding kind of tea for me, with an earthiness that leans slightly towards a shu, & a real ‘even’ kind of flavor. Some Keemuns lean towards smokiness. This one isn’t particularly smokey, at least not today. Some teas slap you in the face with bright edges, bold bass notes, astringency, or whatever. This isn’t one of those teas. Don’t get me wrong, I love my bold Assams, my rich Yunnans, but some mornings I want a quiet Keemun. It’s mildly sweet & soothing, it isn’t outgoing, its…damn…it’s gone!
