Junshan Yinzhen is one of the rarest of China’s Top Ten Teas. Small amounts are made on Junshan Island in northern Hunan Province. We chose the rarest of the rare. These are the buds that have been yellowed, that means slowly, lightly oxidized. This is done by controlling the fixing of the green of the buds. The tea maker does not stop the oxidation process completely (fixing the green). This gives the brew a slightly sweet and fruity flavor. This tea is only sold in China to connoisseurs. Our Chinese friends were surprised that we would buy this expensive a tea. Mike said that there are tea connoisseurs in the States too. So please try this extra special tea.
