NOTES: CREAMY, NUTTY, POPCORN
FARMER: MR. CHANG
LOCATION: LU SHAN, TAIWAN

Mr. Chang has crafted the very popular Jin Xuan varietal in the High Mountains of LuShan, Taiwan at an elevation over 1500 meters high. Sometimes known as “Milk Oolong”, the Jin Xuan varietal has grown in popularity since it’s introduction in the 1980’s. It is known that some companies add flavoring to enhance the milk taste but the very best High Mountain Jin Xuan gets it’s subtle creamy and popcorn notes by the craftsmanship of the farmer.

Needs room in the infuser as the leaves expand quite a lot. I can taste the creamy, nutty and buttery flavor as described but not as much as the first jin xuan I tried at a random ramen restaurant. Turns bitter quickly so don’t let it steep longer than 3 mins, at least for the first steep. Tastes grassy if not steeped enough. 3 mins is perf.
