According to legend, this special grade of Tie Guan Yin (Ti Kwan Yin) tea leaves used to be picked by trained monkeys from rare tea trees on the top of highest mountains in Anxi, Fujian province. It is known as the King of Teas in China. Exquisite jade green leaves that are rolled into small pellets. The floral aroma is captivating and the rich, complex flavors will keep you sipping again and again. Pay attention to the sweet lingering aftertaste that comes from back of your throat, filling your mouth and breath with wonderful fragrance.

Brewing: 1 tsp, 212 degrees, 2 minutes, 5 infusions

Brewing vessel: gaiwan, Yixing clay teapot. Gongfu or Kungfu brewing method strongly preferred.

Storage: Keep Monkey-picked Oolong cool and dry away from direct sun light and other spices.

I tasted this sitting in one of my favorite tea rooms (Dream About Tea). Nothing mind blowing here… just a solid steep. Sweet and light, the tea has hints of vanilla sugar cookies and cut grass with a lingering soft and balanced finish.
