The original blend was a Shou Mei base with freeze-dried blackberries and blackberry and cream flavors. We replaced the Shou Mei base with a blend of ORGANIC Chinese white teas: Shou Mei and Pai Mu Tan. I like the way these two teas taste together. The Pai Mu Tan lightens the Shou Mei a little as well as amplifies the fruit-like notes of the white teas.

After I blended these two teas, I added some whole vanilla beans to tea and let them absorb some of that vanilla goodness! When it came time to flavor the leaves, I minced up some of the vanilla bean and tossed it in there along with the white tea, freeze-dried blackberries and all-natural flavors.

This tea had a wonderful aroma of blackberries, which reminded me of summertime. I enjoyed its mild and fruity flavor. I oversteeped it in my French press cup so it ended up being somewhat bitter towards the end, but this was through no fault of the blender. I definitely plan to relish the rest of my stash.

This is yummy. I just brewed some of this the other day for a pitcher of iced tea and it was so good iced.

It’s also a great hot tea too. A good balance of sweet-tart berry and sweet creamy goodness. The Shou Mei seemed to really enhance the flavors and be enhanced by them – it was a very harmonious marriage of flavors. I like that the berry doesn’t taste too candy-ish to me.

When Frank starts the white teas with the SBT line, I think he should revisit this flavor as a SBT tea.

Oh, I’ll like this one! A neighbor’s blackberries were pretty much a highlight of my summer last year AND there are even more this year! So so good… in yogurt, ice cream, oatmeal and shortcake! Paired with a Shou Mei, blackberries sound perfect. There isn’t too much cream flavor, but plenty of sweet ripe blackberry flavor. The pouch says there should be actual blackberries here, I don’t see them, but at first glance I didn’t see the blueberries in the Blueberry Danish either. The white tea is a perfect pairing with the blackberry. I don’t think it really needs the cream anyway, but I love fruity creamy teas.
