Yesterday was my Mom’s birthday. To celebrate it, I took her and my daughter this morning to have a brunch in Paris at Le Bouillon des Colonies :http://www.bouillondescolonies.com/

It was a nice brunch and the waitress was exceptionnal, very kind and sweet with a real sense of service.
Everything went well even if my daughter decided at one point to suddenly eat bacon with her hands !

The restaurant is serving Mariage Frères teas and this one with the Brunch.
I had a lovely teapot and a teabag.
You know how unsure is a steep in a restaurant, we never know which temperature they used for the water. I would say it was a 85 or 90°C.
I left the teabag 3minutes only and I have had a splendid light amber liquor, smelling delicious bergamot.
This is surely an Earl Grey but very floral, refreshing and sparkling. The base was really wonderful and made me think to try more first flush Darjeelings even if I tended to think 2nd flushs were my favourite. A very thin but lovely hint of astringency.

A very refined and elegant tea. Very unusual tea base for an Earl Grey but clearly a success.

Hahaha. In reading David lebovitz’s “the Sweet Life in Paris” (and a lot of other books about French habits) I learned a lot about how fond the French are of their fork and especially their knife.

First, please forgive me for my English and all the grammatical mistakes you’ll find in my posts.
As English isn’t my mother tongue it sometimes makes things more difficult to express cleverly and accurately what I feel.

I was mainly in black flavoured teas, green as well if not bitter.
I’m now drinking much straight teas because my palate is now developed enough to appreciate them .

My favourite brands are : Taiwan tea Crafts, Teavivre, Mariage Frères,Theodor,Butiki Teas,Dammann Frères, Betjeman & Barton.
My ratings are as follow :

100 to 95 : my darlings; always in my cupboard (or very often ! )

94 to 90 : Excellent tea

89 to 80 : very good tea, a pleasure to drink it

79 to 70: not bad even quite nice, why not having it sometimes, but well,it’s not so urgent !

69 to 50 : Meh, deceptive or just not for me – but has some qualities

49 to 30 : I just don’t appreciate it

Under 30 : is this thing supposed to be tea ?!?!?
