I wasn’t sure if this was an actual tea for awhile. I looked it up finally and low and behold, its real! I was little awry about brewing because I wasn’t sure about spiced white. This is a very fruity tea. Its a strange kind of fruitless though, its spiced but yet sweet. This reminds me of a light apple cider. The white teas balances out the various flavors. i enjoyed brewing this and the aroma is very pleasing.

This brew surprised once I learned of its ingredients. What I thought to be a heavily sweetened ordeal turned into quite the opposite. I brewed this western styled with a generous amount of leaves. The steeped leaves smell of blackberry jam with just a hint of dark wood. The aroma of the brew is quite consistent. The brew itself is very bold. Its slightly sour with a roasted taste. I can distinctly taste a dark jam or currant. This has a very unique flavor profile and I love it! Its very heady and sweet with a sour fruit aftertaste. I will be enjoying this again and again in the new future.

Flavors: Black Currant, Blackberry, Dark Wood

This tea has a very interesting aroma. I can smell the bergamot distinctly, but its blended well with vanilla and caramel. The flavor matches its scent almost exact. This brew tastes of a smooth silky bergamot with a soft root finish. Its mixed in with caramel syrup and a faint citrus. This tea is nice and soft. I think its perfect for relaxing on a cold night, such as this.

Flavors: Bergamot, Caramel, Citrusy, Smooth

Boiling 5 min, 15 sec 1 tsp 6 OZ / 177 ML

The dry leaves smell of yogurt covered blueberries. I’m not sure if this is a good smell or not. I picked a fruit tisane because I wanted something a little more flavorful but without the caffeine. The flavor is very sour. This brew tastes like under ripened blueberries. In contrast, it has a very sweet aroma. I did not enjoy this, but I believe during spring if this was cold brewed it would be wonderful.

Flavors: Blueberry, Sour, Yogurt

Okay, the steeped leaves smell like camphor. It was not cool, hahah. the brew however is much better! Its a very earthy drink. It reminds me of old styled rosemary rolls. It has a sweet essence, with the sharp intake of rosemary. This flavor is then followed by a deep root flavor, which is slightly dusted. The undertones are of a calm citrus. I enjoy this drink, just not the steeping, hahah.

Flavors: Bread, Citrus Zest, Taro Root

Boiling 4 min, 45 sec 1 tsp 6 OZ / 177 ML

I picked this at random; I’m having a hard time making a decision lately. The dry leaves smell sweet like frosting but with an undertone of spice. I brewed this western and waited to see what was in store for me. The wet leaves give off an aroma of an english bakery. I can smell nuts, spices, sugar and butter. The flavor is somewhat different. It has a greasy flavor. The spices are muted and the sweet flavor becomes syrupy. The most distinctive taste is the peppercorn, which sticks out and seems random. This really isnt a tea for me, but I believe it would come to use in the kitchen.

Flavors: Butterscotch, Peanut, Pepper, Spices, Sweet

I have been trying my hand at Earl Grey lately and once I saw a green Earl Grey I was curious. The aroma of the dry leaves is very sharp and inviting. It has a fresh bergamot scent. The steeped leaves give off a ‘fruity pebble’ aroma, which I found amusing. The brew itself is a light Earl Grey. It has the same flavor profile only its vegetal. I am definitely adding this to my Earl Grey list.

Flavors: Bergamot, Fruity, Grass

Millions of peaches, peaches for me! Millions of peaches, peaches for free!! I’ve been a little excited to try this tea; I’ve been having very good luck with flavored Oolongs. The leaves smell of a floral peach with undertones of oak. Upon brewing, the aroma uplifts and maximizes. The peach tones become tangy and almost syrupy. the actual flavor of the tea is unlike the aroma. It has a dominant woodsy and herbaceous flavor. I can then hint at the peach only in the aftertaste. I especially enjoy the undertones of grass and lemon. I do enjoy this tea quite a bit, it would taste even better cold brewed!

Flavors: Lemongrass, Oak, Peach, Smooth

Preparation
1 tsp 6 OZ / 177 ML

I needed a white for tonight to de-stressify and this seemed pleasant. The dry leaves smell of old english potpourri and spices. The wet leaves smell of gingerbread cookies, so I hoped to be in store for a treat. The first initial sip tastes of a vanilla pumpkin pie. It has a warm body and sweet after taste. I can taste undertones of cinnamon and allspice. The flavor of this is very “festive.” It has a combination of cardamon, nutmeg, yogurt, cloves and frosting. I’ve noticed with flavored white teas the actually tea flavor seems to be lost in the mix. This brew seems to honor that, but it tastes simple delectable.

To be honest I have been avoiding this one. I was intrigued at first by name but upon smelling the dried leaves it was quickly put back. I got over my pickiness and decided tonight was the night. I brewed the leaves western styled and the aroma of lime, lemon, and watermelon rose from my mug. The liquor is an interesting cherry red. The initial flavor is a sour cherry. It reminds me of a cherry flavored warhead, but without the tears of pain and throbbing on the ground. It mostly stays that sweet sour “red” taste. This tea would probably be a lot better cold brewed. I couldn’t get past the candy flavor.

If I have learned anything at all from the world of tea it is that I do not know anything about the world of tea. I enjoy good tea, and I try to acquire the best of the best. I usually brew gongfu but I’ve been known from time to time to resort back to western brewing.

Tea Rating System:
I rate my teas based on the category they fall into (Puer, Red, Oolong, Darjeeing, Flushes, Yancha… etc.)
This means that I will rate a Oolong based on how it stands up as a quality Oolong. I try not to compare teas, rather I work to evaluate them on their craftsmanship, harvest, processing, and qi.

I am most strict with Shou and Sheng Puerh, only because of the vast expanse of various experiences, such as; region, vintage, production, processing, etc.
